Blueberry Cheesecake Ice Cream

Yes, I said it blueberry cheesecake ice cream is a perfect treat for the cheesecake lovers and the tartness of the blueberries goes well with the cheesecake. This recipe features delicious Wyman’s frozen blueberries which make a perfect addition to any recipe or even as a snack.

Blueberry Cheesecake Ice Cream

Makes 2 1/2 quarts of ice cream

*Note* This recipe requires the use of an ice cream machine

 

Ingredients

8 oz of cream cheese (I used Philadelphia)
2 cups of whole milk
3 cups of heavy whipping cream
1 1/2 cups of granulated sugar
4 eggs
6 cups of Wyman’s of Maine fresh, thawed blueberries

*Ice cream rock salt and crushed ice for use in the ice cream machine

Directions:

Crack open the eggs; carefully draining the egg whites leaving only the yolks, set aside

Whisk the sugar and egg yolks together in a bowl

 

Add the whole milk and heavy whipping cream to a pot to boil; remove from heat and slowly mix in your sugar/yolk blend

Pour back into the pot and remain cooking on low heat until the mixture has gotten to a thick texture and can cover your spoon

Remove from heat and mix in your cream cheese until melted

Let it cool to room temperature and place in fridge until cold

Add mixture to an ice cream maker

Process in an ice cream maker per the directions of the machine; typically 20-40 minutes. Periodically add your rock salt and crushed ice to freeze the ice cream machine until it has reached a soft-serve state and doubled in size

Remove ice cream from the machine and add in your Wyman’s of Maine blueberries by mashing them into the ice cream mix

Re-freeze for about 2 hours before eating

Eat and enjoy! You can add this ice cream to top pies, ice cream cones or just eat by itself it’s a delicious treat and a great way to get your daily serving of fruits!
